PHP Mail Function problems

Using PHP Mail Function on website. Having problems with languages/characters like á and ö show up fine on the website but show up as question marks when sent in email from the website. When you type a dollar amount in the email, it removes the dollar sign and the next two characters. So something like $2100 would show up in email as 00. I've been told the problem could be the way that godaddy is reading the code on the website. You will need to come up with a solution that works well with Godaddy linux hosting.
