Salesforce Changes - Freight, Options and Products

Hi, We are looking to make a few small changes on the backend of our salesforce, they are: 1. Freight - The freight section we have takes up too much space on the quote template, we want to move this towards the bottom (already done) but also have the ability to edit/change this amount when quoting customers. 2. Options - We want to be able to add options to our quotes but not add the price of the options to the TOTAL of the quote. Therefore the customer can see the price of the option but it doesn't add to the total. 3. We want to allow all users to Add new product codes and edit existing product codes and pricing etc.
