Hi, I have 20+ years experience as a Linux sysadmin/architect and am very familiar with installing and configuring mail systems. I would recommend Zimbra to start with as the mail server. It wraps a huge number of opensource components together (eg. it uses postfix as the MTA) into a very well supported and useable mail system. It has excellent admin and user web interfaces, and it can be resized with a bit of configuration to run happily on small resource servers. The community edition is fully opensource. If you would like to go with a more component/DIY based system then I can install a postfix/dovecot system with a web interface like roundcube.
