i have done so many projects related to counter and display..and iam having very good knowledge of it....come to the project part... As piezo is pressure sensor..it respond when it get pressurised.. generates some voltage..and it sends signal to the arduino to increment the count and display on the seven segment. if you want to decrement the count you need to use two piezo so it identify wheather the visitor is incoming or outgoing. For the completion i will provide you proper arduino code, Printed pcb design, circuit diagram with every single connection

Otherwise, I may proceed with the development on ARDUINO platform and then share the workspace and a video for instructions of use, you can integrate sensor and LCD at your end. piezo input to arduino analog signal, 7 segment directly connected to arduino port or maybe with 4511 driver. reset push button is just a pullup port on artuino thag go to ground when the button is pressed
